Hey y'all!  Didn't realize how long it's been since I've been on here....Hope I post in the right catagory!  :)

Been craving pastrami for a while now and finally went out and picked up a whole brisket.  Why I wait so long to do these things again is beyond me.  :) I've been smoking a lot but forget to take pictures or just to darn busy in between it all.  Did manage a few pics this time.  Used HS's recipe for brine/cure, injected the thicker point end also.  Cured 5 days, soaked 24(changing water often),seasoned, wrapped for 36hr, smoked for 4hrs half pecan, then hickory.  200 degrees until IT of 160.(9hrs total)  I will probably steam tomorrow as I do like a softer meat.  So here are the few pics I took.

I am sooooo jealous.
I got crazy rain for 2 weeks so turned my brined beef into corned beef and not pastrami! 
Enjoy one for me....

I'm a little jealous too. ;D That is a good price for brisket. I would be happy if I could get brisket for twice that amount. :)

Looks great Sandy, glad to see things may be slowing down for you enough that we can see you around here more. :)
