Finally found octopus worthy of smoking. I used a recipe by a member here from Hawaii. The thread was 'Smoked Tako'.

I prepped the meat by dipping 3 times in boiling water:

Then I cut it up and it soaked for a day. It was threaded onto a flexible skewer for easy handling:

And finally, cut up in a salad:

It was good, but a little salty. I may have overcooked it a little.

You're a brave man Grouperman941...Octopus is tough to get just right,tenderness wise,that is...nice plate! 8)
