Title: can I cook without setting oven timer?
Post by: catw on March 15, 2014, 10:36:48 AM
Quick question. I'm smoking pork shoulder for 4 hours and have set smoker timer for that ok. I want the meat to then continue to cook overnight/next day but only seem to be able to set oven timer for nax of 9.40.  Is there any way to set oven time for longer or not use timer at all ?

Unfortunately with the digital smokers 9:40 is all you get.
If you can stay up as long as you can and then up the timer to max
then head to bed.

I've used the original black Bradley, and digital 4 rack Bradley and now the OBS. The original black are easy to do overnighters....But as Corey mentioned, you have to stay up late and reset your timer to 9:40 before bed.

Seems like I've read somewhere that the Auber PID can fix this....but I don't know that for a fact.

Yes, a pid will fix this. I'm just learning mine but it will give you
Almost unlimited (99 hrs) if you choose to set that up. But to use
The kiss principle just set it to 9:40 before bed and get up before its
Elapsed.

Once you're done with the smoke, you can move to your home oven and continue to cook at the temp you want.  After the smoke, it's just heat.  your oven can provide that.  No?
