I'm Ian and I live in Milton, Ontario, Canada. Its about 30 minutes drive west of Toronto. Santa brought me a Bradley and today was the first day it was nice enough outside to try it. 4 racks on right now.

The ribs turned out just awesome! Not perfect, but that will come with experience. My wife (who swore off meat about 2 months ag0) couldn't resist that smell of hickory and had 3 bones. :)
Fantastic. This forum has a wealth of knowledge so I definitely encourage asking questions!
For ribs I use the 3-2-1 for sides and 2-2-1 for back ribs at 220F. Aka 3 hours hot smoke - 2 hours bake in foil with apple juice or beer - 1 hour hot smoke. Sometimes I cut the last hour short and finish them on the propane bbq on low. Last hour is when you add the sauce. Works great every time. :)
