I voted 'choice', which is what I usually buy, but I am not opposed to select. I have bought select pieces that were just as good as any choice, and I have had choice cuts not up to par. I would love to buy prime all the time, but it is not easy to find here. The pricing is such that there is probably not a big market for it. Reality also is that good restaurants always have prime, and the price with them preparing it and cleaning up after me is darn close to the price I would pay.

I also prefer choice but do pick up some select if the marbling and color are there for the price, I even try to use choice for my ground beef. When I can afford to fatten up a steer for slaughter the USDA inspector always rates my beef Prime which is pretty cool but I get to start with world champion stock beef to fatten up.
