Hi all, I've been lurking around this forum for a while now, but have just picked my Bradley smoker (digital 4 rack) up yesterday. I've been smoking meats for a few years now using both horizontal and vertical smokers, but have always had my eye on the Bradley ones so took the plunge. I've followed the guidance and ran it empty with some smoke for an hour this morning, and then couldn't resist so stuck a spatchcocked chicken in there to christen it which we're about to eat and came out looking and smelling amazing :) I'm going to try bacon soon too i think :)

Thanks fellas :) I really don't like cheese so that's a no no. As for there being no going back, I think I passed that point a few years ago :) I have to say, having eaten today's chicken, this smoker has produced the best, juiciest, nicest tasting smoked chicken I've ever had! I'm incredibly impressed with my Bradley smoker :) Can't wait to put it to use again :)
