I saw this a long time ago on BBQ Pit Masters and wanted to give it a try. You use bone-in chicken thighs and trim the knuckle off of each end of the thigh bone and trim up any extra skin and fat to mold it into a cupcake tin (I used disposable). Its actually not that time consuming. They go skin down with a rub for 1 1/2hours at 300 degrees, then flip them skin up with some salt and pepper for another 45 min. After that you remove them from the cupcake pan and put them in a baking pan to apply a sauce, then bake in the smoker for another 30 minutes to caramelize them. They had a little heat, but were mostly sweet and a big hit at my house.
I also made his recipe for Zesty Potato Salad, which was also very good and creamy. The cole slaw was a Jacques Pepin recipe with modification.
