Title: Snack sticks

I recently smoked my first batch of snack sticks and after a few days the casings (collagen) started to get soggy.  I made the sticks out of 50% goose and 50% 80/20 pork.  Can i get some insight as to how to avoid this in the future?  Thanks.

I'm not an expert by no means...and not with goose at all.  But how are you storing them?

Once they cooled off I put them in a zip lock bag in the fridge.

I've learned to store in a plastic container with a few holes drilled in the lid.  Ziplocks tend to cause moisture to leak...maybe leave an end open?
