As Tailfeathers said in another thread, it was too nice a day to not do some smoking.  We were lazing around this morning when my wife Jann said, "Why don't you make some more of those pepperettes".  I only had a 3.5 pound roast to work with but that was all the encouragement I needed.

They turned out really nice, this is a great recipe, thanks for sharing this Greg.  They probably won't last the weekend (it's playoff hockey time!) but that's ok.
