It was finally time for me to make some more sausage. I have been pursuing NEPA's recipes and decided on Polish sausage, Chorizo Verde and Andouille

The polish came out awesome, true to style and taste of most Polish I have had.

The Chorizo Verde, vey labor intensive on the prep but oh my! Very worth the effort. That my friend is delicious!

Andouille.....Wow...just wow, excellent.

Got a chance to use my 5# Kitchener stuffer finally, wow, what a difference from using the attachment on my grinder. Instead of hours it took about 1/2 hour to stuff almost 20# of sausage. And that included clean up!

Sounds like you had a good time, what meat did you use for the sausage? Unicorn??? lol ;)

Yes unicorn, not too gamey, just right

Hahaha I can't either. I have it printed off at home, same format as what NEPA's recipes are, I just assumed. Now I have to figure out where I got that recipe so I can give proper credit....it is fantastic.

I heard if you soak your unicorn meat in beaten dodo bird eggs it takes the gaminess out! ;)
