Title: Hello from northern Ontario

Another newbie here.
Got myself a Bradley 6 rack digital and am hoping to learn a lot here.
Newly retired so I have the time to use it. So far I've done wings, ribs and a whole turkey.
Today I will try a duck. Any suggestions would be appreciated.

Welcome aboard.  You can find all kinds of ideas for recipes in the Bradley at the Bradley User Recipe Site (http://www.susanminor.org/forums/).

Post some pics of your finished product before it gets eaten.   :)

Welcome to the forum rnmac.  Seems as if you have it going your way already.  Great job.  Duck is good smoke.  Legs are relatively easy to do.  If you do a whole duck then I'd spatchcock it.  But after recently tasting a sandwich made from this recipe, I'd do a duck pastrami - It was mighty good.  http://frombellytobacon.com/2010/12/27/duck-pastrami/  Also had smoked buffalo duck wings before that were mighty tasty.

Thanks for the help. My instructions call for 4 hours of smoke at 225F.
Will spatchcock it also. Hope to post a pic later.
