Title: First ribs of the season

I decided to smoke up a batch of ribs this weekend. The weather is beautiful and nothing beats sitting outside with a frosty beverage and catching the occasional whiff of smoke. Costco didn't have the full spareribs that I usually get. Instead they only had trimmed up St. Louis style or baby backs. The baby backs seemed a lot meatier so I went for those. I only do ribs a few times a year so I brushed up on technique by reading TenPoint5's excellent stickied rib post. I went to remove the membrane from the bony side but I swear it was already gone. Seems unlikely that they would have removed it but I shrugged and continued on.

Here they are after spending the night in the fridge. I hit them last night with a layer if yellow-paint mustard and a liberal coating of Iceman's rub.

Into to the smoker. I'm using mesquite. Unless I get rained on I'm planning 3 hours smoke, 2 in foil, and back in with sauce for 1 more.

Nice!  I think it's time to pick up some ribs, those baby backs are my favourite actually.

Thanks! They were delicious. The bark came out nice and thick. So flavorful.
