Title: Cure time for kielbasa?
Post by: kayes on May 01, 2014, 09:58:27 PM
I stuffed 10lbs tonight but now I won't be able to smoke until Saturday. Is that long of a curing still ok and safe?

That will be no problem. You should keep the time below 5 days. Though not recommended, if you start with the freshest meat, and handled the meat properly, you can go 10 - 14 days without any safety concerns.
