I'd be interested on how they turn out. I just may have gotten a poor cut of meat, but a few years ago I purchased a select whole packer, and the cook did not turn out well. It had a very heavy fat cap, heavy vein of fat, and very little marbling. The end result was a very dry brisket.

That's a big price difference between stores rexster, my wallyworld up here in North Texas had the select brisket's for 1.97/lb and they didn't look very good so I passed on them.

Cooked ungraded wallyworld briskets in the past - actually don't see them much at most of our wallyworlds nowdays -  no problem worked fine - maybe a bigger fat cap.  At $1.67, I'd have stocked up also.
