Title: Wet aging brisket

I just picked up a whole packer from SuperTarget for only $2.79 an lb, which I thought was pretty good.  I want to wet age it for a little bit, but it has no dates on it whatsoever. Seems like I've read 30 days from the packaging date is a good place to start, but I've got nothing at all to use as a reference point. Any thoughts?

It is going to be hard to get the packing date from Super Target, though you can always give it a try. Ask for the person who stocks the fresh meat area. The packing date will be on the boxes the brisket was shipped in, and s/he may have some unopened boxes they can get the date from. There may be a "use by", "sell by" or "freeze by" date. If you can't obtain a packing date, I would default to that date.
