Decided to try my hand at some pepperoni. I know traditional pepperoni isn't smoked, but I couldn't help but add a couple of hours of mesquite, I think it turned out to be the perfect combination.
I used a Wild West Seasoning mix that was gifted to me by my buddy Joey, it's excellent and surprisingly has a nice kick to it. The kitchen is awash in the smell of pepperoni which is a great thing. I think I'll let these sit in the fridge for a bit but the early tasting is thumbs up. I see some home made pepperoni pizza in my near future.

Wow, looks really good. I'll have to check into making some. Local grocer had pork butts on sale so I bought 15 lbs and cubed it up and vac sealed it in 2.5 lb bags. Now when I want to make brats or sausage I can just get out the correct weight and grind it when it gets partially thawed. He had beef eye round roast on sale for 2.99 so I grabbed a bunch of that as well for jerky and dried beef. Woo Hoo!
