Title: First Bacon Successful

The main reason I got the Bradley was to do bacon. I don't know why it took me three months to get around to it. I made 10 lbs. of the Maple Cured Bacon from "Charcuterie". It turned out wonderful.

I smoked over maple for 2 hours and took it to an IT of 150*.

Luckily my new Cabela's 10" slicer arrived just in time.

That looks delicious!

I've had my smoker for over a year now, and still haven't gotten around to trying to make bacon. :-[
So far it's just been almonds, chickens, and ribs, though I did finally make pulled pork last weekend, so you never know!

Thanks for sharing, I'll check out the recipe.

That's some good looking bacon and some serious knife skills to cut it that pretty with by hand.
