My brisket finished early and need to know how long i can keep it FTC . I dont want anyone getting food poisoning. Its a 12lb brisket and IT was 185°f.
I've done it up to four hours. It was still hot. I'm not sure how much longer than that you can go.

My last FTC was in for 3 hrs and I still couldn't handle it with bare hands.
