I ground up a combination of turkey thighs and chicken breasts to smoke some burgers. I found a Tori Avey recipe that we quite enjoyed, the mixture is very moist so the final product ended up moist and not dried out. They had a bit of a kick to them too, I topped with tomatoes, mustard and a splash of hot sauce.
I cooked at 220 F, gave them two hours of cherry smoke and took them to an IT of 165 F. Quite nice, I'll try them again.
Turkey Burger Ingredients
1 1/4 lb lean ground turkey (1 package)
1 slice white bread, crust removed
1 1/2 tbsp extra virgin olive oil, plus more for brushing the burgers
1/4 cup fresh flat-leaf parsley, finely minced
2 tbsp onion, very finely minced
1 egg
1 1/2 tsp smoked paprika
3/4 tsp cumin
1/2 tsp garlic powder
Heaping 1/4 tsp cayenne pepper
1/2 tsp salt, or more to taste
1/2 tsp pepper, or more to taste
1 1/2 tbsp applesauce
