I just picked up a 10# belly last night. Going to apply the cure today. mmmmm, bacon
Rex just a thought for the next time. When I am doing Bacon in the 6 rack like you are. I put the bacon in alternating sides. That way the smoke has to step/snake its way up to the top touching each and every piece fully.

Bacon is something I'd really like to try! Not sure I'll do as much as you though... How'd it all turn out?
