Is it necessary to leave the v -tray in when smoking ABT's (less to clean up ) ?

I do because you will still have some grease dripping off from the bacon. Not a lot but i would rather be safe a leave it in place.

Good point. My wife won't eat bacon,so I use proccuitto - works great with less grease drippings.

Proccuitto would be good and you can also get some thin sliced Canadian style bacon both would be tasty.  :)

You can also use a aluminum pan on the bottom shelf ( not on the V-tray ) to catch the drippings.
