Quick question!!
Should I remove the netting the shoulder is wrapped in from the butcher before rubbing and smoking??
Thanks!
catch 22, if going for pulled pork leave it on till your ready to pull,.,, if for sliced then your choice
I have done these both ways, but I've always removed the netting to apply the rub on the inside area. If you remove the netting, and flatten it out for cooking purposes, it will definitely cook much faster. I find I get better results removing the netting; without cutting it, to apply the rub on the inside, roll it back up and put the netting back on. Once the netting is back on I apply the rub.
Thanks guys. I ended up removing the netting to apply rub. Im gonna use butcher twine to roll it back up before smoking!
