Title: First Time Venison

Earlier today a friend gave me ~5 pounds of venison meat from a recent hunting trip to try and make a few things.  ;D It is in the fridge, ready to be processed later this week.
Have never had venison before so am looking forward to trying a few different things in the smoker.
Am thinking some whole muscle jerky (~1 lb) + snack sticks (~1 lb) + summer sausage (~3 lbs w/pork fat) + small venison steak (~6 oz cooked sous vide)

Can you guys please point me to some great tasting recipes for using the venison?  The beef and pork versions I have made using recipes from Old's site are pretty good but I want to maximize this special opportunity I have.
