I haven't been smoking for all that long of time but with the help of the members here I have had some real smoking successes.
I have a DBS 6 rack with a cold smoke adapter so my water for the pucks is outside of the smoker.
I was wondering when hot smoking are there some things that you would smoke without putting a water pan in the tower and could you give me a list?
Mostly I'm wondering about fish, sausage and jerky.

Others will come along and may have a different opinion but for me the answer is no. The bowl of water serves two purposes. It collects the dripping grease and it also extinguishes the smoldering pucks. Remove the bowl and you run the risk of grease or oil dripping on smoldering pucks and have a risk of a grease fire. Even without the grease fire risk, smoldering pucks can produce an acrid bitter taste to your food.

Hi guy's since I have a water bowl in my cold smoke adapter to put out the pucks your suggesting that I still keep a second water bowl in the tower to moisten no matter what I'm smoking. Right

My apologies, I misread your original question but my answer is still be the same. I would have something in the tower to catch the grease drippings no matter what I had in it. Otherwise you are going to have a mess in the bottom of the tower that could run out from under the front door. Don't ask me how I know that one. :o
when I hot cook with the Bradley in a cold smoke setup I put a tray with liquid on the bottom of the cabinet. I may use apple juice, beer or other liquid but I have something.
