Title: Smoked Turkey breast for Canadian Thanksgiving
Post by: Devros275 on October 11, 2014, 10:57:12 AM
Hey all

Just planning to smoke 2- 4.5lb Turkey breasts as part of our Canadian Thanksgiving celebration. We are having a Tradition oven-only Turkey as well.

I did this recipe last year in Summer for our family and everybody loved it!

I brine Turkey breast with following overnight.

4 cups Cranberry Juice(unsweetened)
1/2 cup sugar
1/2 cup Kosher salt
4 sprigs fresh rosemary
4 sprigs fresh Thyme
1 head of garlic smashed

Its funny as after you take Turkey out of brine and rinse it has a really Pink color(from cranberry jc)

Smoked for 3 hrs and then into oven to finish and have nice crispy skin!

But it was sooooo tender and juicy!!

I was planning to smoke with Cherry this time......     ANY THOUGHTS on this???

Never smoked with Cherry before but thought it would go good with brine and Turkey

Sounds like a tasty brine, I personally have never cared much for the cherry pucks, but others swear by them so it's really a personal choice. You might consider doing a test run with a spare turkey breast or even a whole chicken and see if you like the cherry before you're committed on thanksgiving.

I've never tried Cherry, but Apple works very nicely.
Hope you and yours have a great Thanksgiving.
