Does anyone have any tips on smoking a turkey and how long it takes??

Toad, I did a couple of 8 pound turkey breasts yesterday.  Took a little over 5 hours at 250F.  I expect a whole bird would take a little longer.

What I often do is smoke the turkey for three hours or so.  Then I'll move the turkey to the oven to finish cooking at 325F.  This will shave about half an hour off the time and will crisp up the skin.  If you cook completely in the smoker, the skin will be kind of rubbery.
