Title: Cutting Snack Sticks
Post by: rcger on December 05, 2014, 02:52:11 PM
I'm going to be making some snack sticks using Collagen casings.  If I twist the casings prior to smoking to create links, can I cut them at the twist point prior to smoking so they fit on the tray better?  Thanks in advance!

I actually cut them to the length I want as I stuff them and dont twist the ends at all and it works just fine. The only twist I put in is in the very end when I first start stuffing.

I just make 1 long link and then cut them to tray size right before smoking, no problems

I just pinch the end of the collagen casings with my fingers when I first start stuffing. I just stuff into one whole link. I then just use regular scissors to cut to fit my screens.
