Title: To much cure?

We made 25# of snack sticks last Saturday and inadvertently put in 4ozs of I stature #1. Can they be harmful?  Thanks

I'm not familiar with stature #1, but if it is the same formula as cure #1 which is 93.75% salt, and 6.25% sodium nitrite (1 pound of salt plus 1 ounce of sodium nitrite), you used way too much. You used 4 times as much needed. The amount you use is for 100lbs of ground meat/fat.

I would say that it is harmful, but that is a lot of meat, so I would send Sausage Maker an email and/or post your question on the Homemade Sausage Making (http://www.wedlinydomowe.pl/en/). Be forewarned if you post your question on that forum, you may need to prepare yourself to eat some humble pie. On the other hand, they may have other suggestions beyond throwing it out.
