Title: Sausage Casing Question

Hi all,

So I've found it exceedingly difficult to find sausage casings.  The best I was able to do was buy a hi-mountain bratwurst kit, which I used to make bangers.  It was a lot of fun and they turned out great.  My question is, can I use the same casings meant for thicker bratwurst style sausage for thinner pepperoni snack sticks?  I don't know the size of these casings, but I'd guess they are 22 mm or whatever the standard size is.  Is there any problem with not stretching the casing completely out?  Could the sausages be too chewy/gummy?

Have you tried a small meat shop? A shop that makes its own sausage and cuts of meat and that will cut and wrap venison will probably have sausage and pepperoni casings available. The only problem I had with that is that it was alot of casings for what I needed. Next time I will re-package them in user friendly amounts before freezing.

Boxcar Stuffers is local,in Aldergrove and has a good supply of all you'll need for making sausages.I have them mail my stuff as The postage is less than the cost to drive.

There are many online places to buy casings. Just google sausage casings.
