Trying a 11lbs choice brisket with my Xmas present auber dual probe.  Seems easy so far.

I must apologize for the lack of finished pictures. We had a little excitement Sunday and I lost track of everything! My youngest daughter got engaged and it all went down hill from there, between oohing and aaahhhing at the ring and wedding planning it
was a lost cause.  The brisket turn out to be the best one yet.  Very juicy and tender.  Great taste.  The PID performed flawlessly and kept the temp spot on at 225.  Very happy with everything. Again, sorry for the lack of pictures. Now I need to go look for a second
job to pay for this wedding!

It sounds like you could open a smoked brisket stand and make some money.  Congrats and best wishes to your daughter and her future.
