Title: making spam hot sticks

I have a grand daughter that loves spam when she comes to visit. So i had and idea to make some spam hot sticks as a treat. Has any one tried a project like this or have any ideas.

I have tried smoked spam.  Its good.  If you like spam, you'll love this.

Do you have one of them jerky guns? If so I would not use any casings. Just squirt out a round snack stick onto frog mats or the like. Smoke at 150F to firm the spamsticks for a few hours, watching to make sure they don't dry out to much. Spam is ready to eat right out of the can so I don't think it needs cure. Maybe someone might pipe in on that one as I'm not totally sure???

Man you would need a lot of cans of spam to make sticks, lets us know how it turn out.

I'm not sure if you are referring with starting with the commercial Spam, or making your own. I hate Spam. I had to eat too much of it as a kid. Having said that, there are recipes on how to make Spam. Search for "How to make Spam", then you will have more options on how to cook the sticks.

okay I took Habs advice and goggled Home Made SPAM, looked like spam when it was finished !! So according to the recipe it called for nitrites which I assumed was obtained from using MTQ. I would think to buy spam and make any quantity of sticks would be very expensive, however the recipe made a loaf pan of it which would bring the cost way down. My big question is , with MTQ in it already would you have to add more for the sticks or use cure #1 or could you just grind it mix in spices and stuff and smoke. This was the only recipe brought up for making spam so there could be more out there and the ingredients were nasty !! only pork shoulder and ham with some spices.  ;D see told you it was nasty. I didn't print off the recipe and with wonderfully old mind forgot the exact amounts and ingredients.

X2 Habs! My other "hate" is orange marmalade, which was sometimes all there was for school sandwiches. They sat on a shelf from morning 'til noon in a very hot, old, 2-room school and fermented for about 4 hrs. NASTY!

If it is this RECIPE (http://www.cupcakeproject.com/2012/06/homemade-spam-recipe.html), it contains enough MTQ, so no further nitrites are needed. In the furture; if you want to convert the recipe to use cure #1; instead of MTQ, use 1/2 teaspoon of cure #1, and start with 2.5 teaspoons of pickling salt (you may need to add more after you make a test patty).

Habs, I remember there was another one called Spork. It must have been a competing brand and it was just as nasty! On a side note, I knew an old guy that was stationed in France during WW II after D-day and his assignment was to guard the stock pile of Spam. I thought he was joking. Who would steal the stuff, much less willfully eat it? He was serious though. " Daddy, what did you do in the war? Well son, I guarded the........never mind. "
