My first attempt at a pork butt was awesome! As my main influence is Aaron Franklin, I followed his youtube video (https://www.youtube.com/watch?v=LbzEa_juegs) for the rub and overall method. I used 250F with applewood for 2 hours on a 4 lb butt. I wrapped in foil when the temperature hit 170, and it was done after a total of 6 hours.
What came out was a juicy, smoky, melt-in-your-mouth slab of meat that was better than any pulled pork I've ever had. I paired this with a bourbon bbq sauce recipe (http://allrecipes.com/recipe/bourbon-whiskey-bbq-sauce/) that I absolutely love. Here are some pics for you:
