Pretty new to smoking with my Bradley. I have bought a slab of pork spare ribs that weighs 6lb, which seems heavier than most recipes I can find. Will the 3-2-1 method work, or should I extend the time a bit?

It should work. But I use the last "1" as a guide. I will to a tender test starting after 1/2 hour. And then about every 15 minutes. So it may take longer or shorter. For a tender test I use a toothpick -if it goes in like butter it is done.

Welcome to the forum.
From your description you purchased whole spare ribs. Most recipes use a trimmed spare rib called St. Louis Style. As mentioned the 3-2-1 method will work, but they may cook uneven. You could trim them St. Louis style, and cook the rib and the tips separately on separate trays. Trimming is fairly easy, and optional. You should be able to find many YouTube videos on how to do that.
