Smoking a small pork shoulder, picnic cut, today. It's only about a 7 lbs cut. My plan was to smoke it for just 1 hour and then finish in the oven. After about 1.5 hours I checked on it and thought the smoke smelled a little funny, kind of like the smell of a burning candle. Opened the smoker and 2 spent pucks are just cooking away in the bowl. I forgot to add water!!!
I'm thinking since it was only in there smoking for an hour or less, I'll still be ok. What do you think?
Won't cost you any more to try finishing it. (I think you're going to be OK. You've smoked the same way a chip or pellet smoker works.) Since there isn't any food safety danger, I'd go for it.
