I've finally arrived at the point where I can make sausage. Collected all the gear; grinder, mixer, stuffer, BDS is modified for sausage and I have freezer full of deer, bear and bison trim. Found casings today and now am in search of a good recipe which will determine what spices I buy. Yours looks great and I would love a crack at making it.
Not my recipe .I got it off the susanminor.org site .Mikes kielbasa.One of my favorites though.always comes out great doesn't last very long around here though.lol.Found 70/30 porkbutt/venison is a good mix for our tastes.This recipe won't let you down.Good luck!
