Title: New Digital Smoker, first run....
Post by: jeffncris on January 30, 2016, 10:24:16 AM
Hi guys,
just unpacked the my new DS, ans of course, I'm doing ribs first! Got my own rub, gonna go at 225 for about 3 1/2 hours or so. My question: how long to run smoke? I was thinking about an hour, or is that to little? Does the time for the ribs seem right to you guys?

Many thanks, looking forward to many great meals!

Hi and welcome aboard.  Have you heard of the 3-2-1 method?  3 hours initial cooking in the Bradley with smoke, followed by 2 hours cooking wrapped in foil with a bit of apple juice or some other liquid, and finally 1 last hour cooking out of the foil.  You'll know when they are done when the meat pulls back a bit from the tip of the bone.  Adjust your cooking time based on how "fall off the bone" done you prefer them to be. I sometimes do 2-3-1.  Also, maybe a bit less overall time for smaller ribs such as baby backs.

There's a tutorial at the top of this section of the forum that may help.  How to Make Ribs in a Bradley Pictorial (http://forum.bradleysmoker.com/index.php?topic=10182.0)
