Title: Hab's Ham
Post by: Shuswap on May 10, 2016, 04:04:30 PM
I used Hab's recipe/procedure for this ham except I double smoked it.  Day1 four hours of hickory at 140F; day 2 four hours of apple at 140F.  It will rest in thefridge wrapped in greaseless paper for 7 days.  :P

That looks mighty tasty. I've used Habs recipe with an extra two days of smoke and you're in for a real treat.

You ham looks great. I never gave it a thought to double smoke my ham. I'm going to double smoke the next time I smoke a ham.

Life can be funny eh.  I didn't think of double smoking until I adopted a triple smoked bacon and when I was doing this ham DW said "you know I like a double smoked ham".  Go figure. :-[
