I'm twl. I've been a member for about 5 years but inactive for 2. I live in the Panhandle of Idaho on lake Pend Oreille. I've smoked lots of stuff. My favorite fish is Kokanee although Salmon is scrumptious. Cured and cold smoked LOX is awesome. I did a brined and smoked turkey for Christmas a couple years ago with great results - 5 hours Peach + about 10 hours @ 200 F probe to 160 F. This forum has been good to me and I enjoy the camaraderie. Please read my earlier post and give me some pointers if you can think of it.
