Welcome to the forum.
I would start by searching YouTube and Google to find a recipe that looks good to you and adapted it to the Bradley. You should apply 2 - 3 hours of smoke, and continue to cook until the meat is at it's proper doneness. Hickory and mesquite are most often use, but mesquite is very strong flavor in the Bradley; so I would hesitate to use it. Pecan would be a good choice.
The below link is to a post by member Pachanga on how he smoked a cow's head. Instead of a maguey leaf, you may be able to substitute butcher paper.
