Title: Pulled meat with rice

I started experimenting on a recipe using pulled pork or beef with rice. Wife makes a rice dish with sour cream and diced green chilies. I thought that could be a one dish meal by adding pulled pork. I like to add a little more seaonings to some things. This is what i came up with.

2 cups cooked rice
1 cup pulled beef or pork
1/2 cup sour cream
1/2 cup diced green chilies
1/2 tablespoon Penzey's Southwest Seasoning

Mix the above ingredients together and heat at 325 F for 30 to 45 minutes.

I used Minute Rice since I am lazy. I put the Southwest seasoning in with the rice while it was soaking up the hot water with the idea of infusing the rice with the flavors. That seemed to work well, the rice alone was very tasty.

Wife thought it was very good but suggested topping it with grated cheese next time.

How could you go wrong with cheese?! :P :P
