I grew up in W. Kentucky, near Paducah.  In Paducah there is a Q joint called Starnes - its been there for as long as I can remember.

The pulled pork is, of course the way to go at Starnes.  I am trying to get that good Hickory smoked flavor into my pork shoulders here at home in Texas with my Bradley.

Anyone out there who is from that part of the country and knows the flavor I'm talking about - chime in with a receipe if you have managed to master it.

Oh, if anyone has a clue how to make that great sauce they have...   ;D

Can't help much on what you are looking for, but you would have to go some to beat Iceman's Sop N Sauce.  That stuff is so good you could mix it with vodka and simply drink it.  It is perfect for chicken and finishing off ribs.
