Title: Ideas - Pork/Ham Jerky?
Post by: cheapguy69 on November 15, 2006, 10:45:52 PM
I've tried a few commercial products of Ham Jerky and wondered if anyone had a possible recipe. I'm thinking of just curing some pork loin and smoking it like regular whole muscle jerky. Thoughts?

I wound up making a batch. I used a Pork Loin I had sitting around waiting to be bacon'd and I used some of the Hi Mountain Original Jerky cure and it worked out pretty good. It has a unique flavor, but still hints of it pork nature. I might try to find some kind of Sweet jerky the next time I make up a batch and see how it goes.
