Just wanted to say thanks for the "How and Why" on ribs post.  Followed your method  yesterday.  Rubbed the ribs the night before and smoked/cooked them in the BS for about 7 hours at 225 degrees.  Then I FTC'd for an hour to keep warm.  I have to say they were excellent.  Out of 7 people, I got 3 "best ribs ever" comments.  I am very pleased for my first rib smoke.  The meat was very tender and held its texture well.  Was able to slice the ribs into individual ribs. but the boned cleaned very very easily with a bite.  Just wanted to thank Iceman for the tutorial.  ;D
