While answering the roll call in general discussions I mentioned the above. At the request of a member,I explained the technique/recipe. It is rather long, so I'd like someone in charge to move it here where it belongs,please. It really does work, and with a gentle hickory or mesquite smoke, it is even more unique. Since I knew my end goal, I judged the Bradley method to be excellent for this. One thing I did that is counter-intuitive in smoking in the Bradley was to add a stainless steel bowl of water after the couple hours of smoke.The bowl was the same as the bisquette extinguishing bowl and I filled it 1/2 with the water.
