I purchased a BS for my father in law for x-mas. We all like scallops and oysters and thought it might be a good maiden voyage for his BS. Do you have any tips/recipes/suggestions?? ???

Get the large bay scallop's and put in the fridge overnite with maple syrup and LOTS of fresh minced garlic,smoke with something mild...........apple or pecan for about 1 1/2 hrs..there done....IMHO ::)
The maple scallops are great as Thunder Fish says. I stole his idea in a post in here somewhere. The bacon wrapped are also very nice. I cook the bacon to just before it gets real crisp and hard to wrap. The approach here was also stolen from someone. Gotta find the thead and pass it to you.
i took the two above's advice, and modified it to a cold smoke for 1 hour. Finished the raw scallops on the grill with a flash grill'n on each side. Melt in your mouth tender and tasty.
See the post below. Oldman was talking about not having citrus wood flavor pucks. Gave me the orange peel idea for the oysters. Not a huge taste with the oranges but looks super. Come to think of it my last origional throught was about 1962. Good luck and enjoy Xmas with the smoker - great gift!

One of my favourites is wrapping the scallops in bacon, I use that particularly on the queen/bay scallops. :)
A guy should start a post and have it stickied to the top and have it read "all newbies please read" and have a breakdown of all of the abrevations. Or a glossery of such. Then us newbies can print it and tape it to the wall to refer to. That way some of our heads don't pop off when they are spinning.
I could never make it in high school in the generation of text messaging with all of their abreviations.
