Title: electric meat grinder/ stuffer

Which cutting plate should I use for grinding my deer, coarse or medium plate? I am going attach a stuffer to the grinder, which plate would I use to make sausages? Any advise would be appreciated.

After doing 7 deer this year I used the course plate; but grind the meat twice to get a even grind. After the 1st grind; add your seasonings, then run the meat through again with your stuffing tube. This works good for brats and sausages. You did not say, but are you adding pork? I mix 2 parts deer with 1 part pork for good brats.
