Title: Summer Sausage lesson learned.........

Stayed up Christmas night till 1:30 in the morning stuffing 24 inch summer sausage casings with venison, jalepenos and high temp cheese. I went to bed very smitten in my suasage I would smoke the next day. While laying in bed I got to thinking, are those 24 inch long casings even going to fit in my 4 rack bradley. I got out of bed and measured it and soon found out there was no way those huge thangs were gonna fit. I got up the next day and cut them in half and tied the other end off. This was my first summer sausage experience and I must say they came out awesome. Put them in the smoker for 10 hours very low and very slow till I got an internal temp of 152. The High temp cheese and jalepenos did the trick.
