Title: finishing turkey to crisp the skin?
Post by: parishollow on December 30, 2006, 07:59:56 AM
If I want to finish the bird in the oven to crisp the skin, at what temp should I take it out of the smoker? Oven temp at 350º? and about how long will it take.
Thanks for the help, you guys rock!

When I want to improve the texture of the skin, I generally will almost fully cook  the poultry, by pulling it out of the smoker at 160°F, then place it in a 400°F - 450°F preheated oven until the skin "crisps". I've never partially cook a whole turkey or chicken and then finished it off by roasting in an oven. I believe others have.

Just do not FTC poultry, it just creates a steam bath, that will worsen the skin texture.
