Title: Rubber Chicken Skin and Buffalo Wings
Post by: Gizmo on January 06, 2007, 09:59:38 PM
Several posts recently on smoked chicken or turkey skin being a bit rubbery.  Don't need to throw it away.  Took the left over skin, backs, necks, and other bones including the wing tips from some future buffalo wings and tossed them in a stock pot with the standard fare for making a chicken broth.  Will be having some tasty chicken noodle soup soon.  Skin softened right up but the flavor is now out of it and in the broth.   ;) :P
