Title: Beef Bacon

I saw and bought some beef bacon at the store Sat.  Has anyone ever made or eaten beef bacon.  I was thinking about wrapping some ABT's with it later this week.[:p]

Got an older copy of Great Sausage Recipes and Meat Curing.  Kutas does mention beef bacon and says to dry box sure it the same as pork belly bacon, except cure for 6 to 7 days, rather than 1 day/pound.  Can also be brined 7 to 8 days, overhaul on 4th day.  I haven't yet tried it.  Just made first batch of pork belly bacon last week.

Got some earlier this year at a little meat shop locally. It's not as sweet and more lean, but tasted great. I'll definately buy more when they have it. I may have to even dive in & try to make my own.
